A sold out event at Myakka, hosted by a couple who organized the cuban hog roast. It consisted of buying a whole 36 kg (80 pound hog,), injecting it with a brine, marinating it for a few hours and then placing it in a metal hot box.
I guess an apple is put in its mouth to stop it from squealing!

A metal plate is set on top, covered with hot and burning charcoal. The hog is then roasted for about 6 hours.
The result:
Cooked pulled pork.
DELISH!!
After dinner, it was time to enjoy good times.

Sunday, we had the chili cook off super bowl party.Sorry no picts.
Lots of chili -18 crockpots full!
Sure did not want to light a match after that event.
After all the eating and drinking, it is always good to get out and go for a much needed bike ride to get some exercise.
Yes, we do ride and not just stand pretty, beside our bikes.
The Myakka River flows through 58 square miles of wetlands, prairies, hammocks and pinelands.
First off picnic time by the side of Upper Lake,
followed by a ride on "Gator Gal", one of two air-powered boats.

After leaving the speeding water vessel, something of interest caught the guys interest...
and soon learned they were watching...
After much of a struggle, the fish was finally swallowed and off flew the bird.
Next, was the canopy walk attained by hiking less than a mile, using a nature trail.
A long way up and
a long way down.
A great day!
Hoping to return to the park, to ride along some of the bike trails throughout the park.
Today is Thursday and I have finally caught up on all our events, comings and goings.
Wonder what next week will bring?
